Lets be honest – brussel sprouts aren’t winning any awards in the most liked veg category, but who wants a soggy ball of green mush?! NOBODY! Brussels are pretty much always over boiled and the outcome isn’t what gets us excited for Christmas dinner – until now! These roasted brussels are game changing…
PREPERATION
INGREDIENTS ( 4 SERVINGS)

- 200g brussel sprouts
- 8 baby potatoes (200g)
- 50g blanched hazelnuts
- 100g pomegranates
- 2 tbsp maple syrup
- 1/2 tsp chilli flakes
Tip : Honey works in place of maple syrup too – but choose maple if you have both!

- Baking tray
- Knife and chopping board
- Spatulas
MAKING
SIMPLICITY
This recipe for Deliciously Ella’s Roasted maple sprouts is SO simple and requires very little effort! Just what you need on Christmas day! Just four easy steps:
- Cut brussel sprouts in half and potatoes in quarters
- Put them into baking dish with chilli, salt & pepper and olive oil – cook for 30 minutes
- Add hazelnuts – cook for another 10 mins
- Drizzle maple syrup and stir in pomegranates and it’s done!
TIME
It took us a grand total of 45 minutes, but this included the time in the oven , so you’re actually cooking for much less time than that! To be honest, the most time consuming part was getting the pomegranate seeds out of the pomegranate!!! So if anyone has any tips, let us know!

TASTE & TEXTURE
These roasted maple sprouts are a million times better than traditional soggy, boiled sprouts that are pretty much flavourless! Roasting instead of boiling gives the sprouts a crispy texture and a much deeper flavour. The combination of chilli and the sweetness from the maple syrup works so well and really jazzes the sprouts up, without being overpowering. The hazelnuts and pomegranates add whole new texture and give the dish a great crunch.
