Homemade Vegan Mac and Cheese

To make this Homemade Vegan Mac and Cheese Recipe, you will need:

  • 8 oz. Chickpea Pasta – (or any other pasta you want to use!)
  • 1 cup cashews, soaked
  • ½ cup Nutritional Yeast*
  • ¾ cup unsweetened almond milk
  • 1 teaspoon onion powder
  • 1 teaspoon garlic powder
  • pinch paprika
  • ½ teaspoon sea salt

*The only ingredient you might find tricky to find is Nutritional Yeast. Some supermarkets now stock it, but it’s not available in them all yet. You’ll definitely find it in health food stores, or it’s super easy to buy online.

 Tip : We used Buckwheat Pasta, which we loved, but be sure not to overcook it as it can become mushy!

Tip: We used dried herbs instead of fresh herbs as suggested, and it worked a treat.



This recipe is super simple to make and you can save time by making the cheese sauce whilst the pasta is cooking. To do this, simply pop all of the ingredients into your food processor or blender and whizz until you have a smooth mixture. Stir the sauce through the drained pasta, and sprinkle with herbs, if desired – easy as that!

This is the perfect recipe to make for the whole family, as it’s easy to make in large portions. You could also store some in your fridge/freezer for easy week day meals.

This recipe said 4-6 servings, but we only managed to get 4 servings, and they were quite small servings, so bare this in mind when making yours!

Tip : You could sneak some veg into this meal by stirring through some peas or spinach – it tastes so good they’ll never notice!


This recipe took just ten minutes to make! However, it’s important to remember to soak your cashews before you intend to make this. The Toasted Pine Nut suggests soaking your cashews for at least 12 hours, but we soaked our for just over 2 hours, and it worked perfectly!

Tip : We popped ours in the fridge after making and heated it up later that evening. We found the sauce had become really thick and clumped the pasta together, so we added a few tablespoons of water and it softened it up no problem!

This recipe gives you a super thick, delicious cheese sauce, that satisfies any comfort food craving! It’s hard to believe that this recipe is vegan as the cheese sauce is so creamy. The nutritional yeast is the magical ingredient that we need to thank here, as it’s responsible for that cheesy, creamy flavour with none of the dairy!


Ok, so we love that it’s cheesy and dreamy and fantastic, but compared to REAL cheese sauce, it’s much less cheesier (but that’s to be expected right?… THERE’S NO CHEESE IN IT!! )

In a typical shop bought non-vegan:

Water, Cheese 5%, (Cheddar Cheese (Milk, Salt, Cultures, Enzyme (Rennet)), Anti-caking Agent (460), Preservative (235)), Vegetable Oil, Thickener (1442), Rehydrated Onion, Flavour, Salt, Sugar, Yeast Extract, Emulsifiers (471, 433), Vegetable Gum (415), Mineral Salt (450), Spice, Colours (100, 160b).

You can see from the list above that it’s full of ingredients that we don’t recognise which for us is a big no no! It is full of additives and unnatural ingredients, including thickeners, colours and flavours. It also has added sugar, salt and oil, whereas the homemade sauce has none of this!



This Homemade Vegan Mac and Cheese is hands down one of the best vegan alternatives we’ve tried. Not only is this alternative MUCH healthier, it will satisfy anyone who is craving a comforting, creamy cheese sauce.
