Vegan – Dairy Free – Gluten Free – Refined Sugar Free – Nut Free
INGREDIENTS ( 2-3 SERVINGS)
The ingredients for Hippie Lane’s Scrambled Tofu are all available in your local supermarket.
- 3 Tomatoes
- 2 Field mushrooms
- 3 Garlic cloves
- 1 tbsp Olive oil
- 1 tbsp Grapeseed oil
- 100g Baby kale leaves
- 1 tbsp Lemon juice
- 1 Small Brown onion
- 1 Red chilli – (this is optional, we left it out and didn’t miss it!)
- 1 cm Fresh turmeric
- 300g Medium – firm tofu
- 1 tsp Cumin
- 1/4 tsp Paprika
- 2-3 tbsp Coconut milk
- Salt and pepper
Tip: To reduce the ingredients list and keep the cost down you could make these subtle changes, they didn’t affect the recipe for us –
- Instead of grapeseed oil use 2 tbsp of olive oil
- Use ground turmeric instead of fresh
- Use normal kale leaves as these tend to be more readily available
- Leave out the red chilli
We needed no fancy equipment at all to be able to make this Hippie Lane recipe. Your kitchen is probably full of this equipment already, and if it’s not then it should be!
- Chopping board
- Small bowl
- Measuring Cups and Spoons
- Large sauce pan
- Baking tray lined with baking paper
Tip : Don’t forget the baking paper, it makes washing up much easier!
Although simple, this recipe does require multi-tasking which makes it a little bit fussy! While the tomato and mushrooms are in the oven, you are busy preparing the kale and the tofu! The recipe breaks it down really well though, so if you follow it step by step it won’t get complicated! Despite the three separate components of this recipe, we were surprised to find there wasn’t too much washing up – reusing the same pan for the kale and tofu helps!
From start to finish it took us 25 minutes to make Hippie Lanes’s Scrambled Tofu.
Tip: Make sure you get medium – firm tofu, ours was a little too firm so it took longer than it should and a bit of extra force to turn into a scramble!
Hippie Lane’s Scrambled Tofu is a great vegan alternative to a those missing their cooked breakfasts, but wanting a healthier option! The recipe has lots of health benefits too; the veggies – which are full of essential vitamins and minerals; the tofu – which is a great source of protein for vegans; and the turmeric – which is an anti-inflammatory super spice! This recipe also contains all natural ingredients and is free from gluten, refined sugar, nuts and dairy.
This recipe leaves you with a gorgeous, colourful breakfast bowl brimming with interesting flavours. We loved the garlicky tomatoes, the turmeric infused tofu and the tangy lemony kale! The scrambled tofu is delicious and has an incredible texture – it’s an amazing alternative to scrambled eggs!

The recipe was simple and relatively fuss free, the ingredients were really easy to find and only standard kitchen equipment was needed. Hippie Lane’s Scrambled Tofu is a great recipe to make when having friends or family over for brunch and is 100% worth the effort!
